Ingredients

    Dry Ingredients:

    3/4 cup brown rice flour
    1/4 cup millet flour
    1/4 cup corn flour (may use another GF flour on hand)
    1.5 tsp baking powder
    1 tsp baking soda
    1/2 tsp sea salt
    1 tsp xanthan gum
    1 tsp cinnamon

    Wet Ingredients:
    1 cup apple sauce
    1/3 cup oil of your choice (I like canola or coconut)
    1/3 cup honey (or maple syrup is yum!)
    2 tsp vanilla
    1 tbs egg replacer (+) 1/4 cup water--(for 2 large eggs)
    1/2 cup apple juice


Tips

We have wheat, egg, and dairy allergies in my family, so I adapted this recipe for our family needs...but i believe that using milk for the apple juice and real egg for the egg replacer would still make a delightful GF muffin. explore!


Directions

Mix the dry ingredients together in a large bowl.

Blend the wet ingredients in a high speed blender then pour into the bowl of dry ingredients. Mix until smooth. Fold in the 1.5 cups of chopped apple.

using a muffin scoop, spoon the batter into 12 muffin cups.
sprinkle with cinnamon or coconut sugar for added flavor.

Bake in the center of a 350 F oven for 20-25 minutes...Check with a tooth pick if needed. Muffins should be golden and baked through... Enjoy!
