Introduction

Ingredients

    1.5 cup shredded mozzarella cheese
    2 tbsp (2 oz or ~ 56 g) cream cheese (full-fat) -- cubed small
    1 egg
    3/4 cup almond flour or almond meal

    (large cookie sheet or pizza pan covered with parchment paper)

    To complete a pizza, add your sauce and other preferred ingredients, topped by cheese, and cook a further 10 minutes or so (until cheese is melted). NOTE: if you will be adding meat to your pizza, it will have to be cooked beforehand!

Directions

Pre-heat oven to 425 F.

Place mozzarella and cream cheese in a medium size microwaveable bowl.

Cook in microwave for 1 min, stir to mix cheeses and then cook another 30 seconds, stirring again when removed (ATTENTION -- cheese will be very hot!)

Stir in the egg and almond flour until well mixed. Place whole ball of mixture in the middle of the pan covered by parchment paper.

With wet hands carefully spread the mixture evenly over parchment paper. It should spread out thinly (3/4"?) with a dough-like consistency (if it appears too"stringy" then too much time has elapsed since it exited the microwave and you added the other ingredients) your mixture has hardened too much which will require it to be put it back in the microwave for approximately another 20 seconds).

Sprinkle with garlic salt and bake for about 8 minutes and, if necessary, poke rows of holes with a fork to avoid bubbling.

At that time, poke holes where any large bubbles may have popped up.

Continue cooking for a further 4-6 minutes, or until it appears to be slightly brown on top.
