Introduction
Peel and cube sweet potatos, peppers, onion - mix with oils and spice and bake at 425 for 20 (or until done)Drain can of black beans, chop cilantro - put aside
When vegetables are done, let them cool for a bit
Mix vegetable mix, black beans, cilantro and lime juice together.
Spread mixture in the centre of 6 tortillas
Fold all sides in
Place folded side down in baking pan sided by side.
