Ingredients

    1 large onion
    1 eggplant
    1 can Italian tomatoes
    1 can mushrooms
    1.5 T minced garlic
    1 T black pepper

Tips

Different flavors of canned tomatoes can be used to give the dish a different zing.


Directions

Carmelize onions in non-stick pan
Placed cubed eggplant in pan and carmelize them a bit
Put 1/2 cup water in pan and cover
Steam onions and eggplant 5-10 minutes until eggplant is tender
Put canned tomatoes, mushrooms and garlic in pan and stir
Add black pepper to taste
Let simmer for 5-10 minutes to blend flavors
