Ingredients

1 package firm tofu
1/4 c flour
2 tbsp dry breadcrumbs
1/2 tsp driend thyme
1/4 tsp dried dill
1/4 tsp salt
1/4 tsp paprika
1/4 tsp pepper
1 large egg, beaten
2 tsp veggie oil
2/3 c rice vinegar
2/3 c sugar (I do splenda)
1 c water
1/4 c soy sauce
2 Tbsp cornstarch
1/2 c water
2 T minced ginger
1 tsp veggie oil
1 c yellow bell pepper
1 c snow peas
1/2 c chopped plum tomatoes
2 cups cooked angel hair pasta (4 oz uncooked)
Directions
Cut tofu into slices (lengthwise) and layer with paper towels.
Combine flour and next 6 ingredients. Dredge tofu slices in flour mixture, then egg, then flour mix again. Heat 2 tsp oil over medium. Add steaks, cook 3 min each side. Cut each into halves or 4 squares.
Combine vinegar, sugar, 1 cp water, and soy sauce. Bring to a boil. Reduce heat and simmer 3 min. Combine cornstarch and 1/2 cp water then stir into sauce. Bring to a boil, cook 1 min. Remove from heat and add ginger. Keep warm.
Heat 1 tsp oil, add bell pepper and snow peas. Fry 2 min. Add tomatoes, fry 1 min. Serve over pasta, top with tofu and ginger sauce.
