Number of Servings: 4

Ingredients

    500g White Fish Fillets
    500g cooked shrimp (prawns)
    1 Mango (cheeks sliced thickly)
    1 Peach (Sliced)
    2 Large Kiwi Fruit (peeled and sliced thickly)
    2 Shallots (sliced finely)
    Lettuce Leaves
    1 tsp Tabasco Sauce
    1/2 cup Low Fat Mayo
    1/2 cup Tomato Sauce
    1/2 cup White Wine

Directions

Poach fish fillets in wine, in a heavy based pan for 5 minutes or until fish is cooked. Drain.

Combine Sauce, Mayo and Tabasco to make dressing.

Place Kiwi, Shallots, Peach, Mango into a large bowl. Add fish and shrimp. Add Dressing and stir through gently until covered and fish has broken up into small pieces.

Serve on top of Lettuce leaves arranged on a plate and enjoy.
