Number of Servings: 6

Ingredients

    610g (1.34lb) organic ground beef
    1/2 green bell pepper, diced
    2 small portabella mushrooms, diced
    1/2 cup quinoa (cook according to package directions)
    2-4 tablespoons Earthfare Organic Ketchup

Tips

(I cut it through the middle to ensure that it was cooked all the way through)


Directions

Preheat oven to 375. Combine all ingredients in mixing bowl, making sure quinoa is evenly distributed (it tends to clump). (reserve 2 tbs ketchup to top)

Form into loaf in 8x8 glass dish and top with ketchup, if desired. Bake for 35 minutes, or until juices run clear.
