Ingredients

    16 oz. Bag of Dry Lentils (or 2 Cups), picked over
    2 Medium Carrots, Peeled and cut into coins
    2 Medium Ribs of Celery, cut into chunks (similar in thickness to carrots)
    1 Medium Onion, cut into chunks (same size as above)
    2 Cloves of Minced Garlic
    1/2 Tsp. Dried Thyme
    1/2 Tsp. Salt
    1/4 Tsp. Pepper
    6 Cups 99% Fat Free Chicken Broth
    2 Cups Water

Tips

Stores great in the refrigerator - leftovers for lunch and dinner are fantastic.


Directions

Place ingredients in a crock pot in this order: carrots, celery, onion, garlic, lentils, thyme, salt, pepper, broth and water. Cover and cook on low for 6 hours. Enjoy!
