This is a healthy option for breakfast on the go. It uses 1 carton of egg whites, plus a few eggs, Canadian bacon, spinach & whatever other vegetables are on hand. Ingredients

    Egg Whites, 16 oz carton
    Eggs, 3
    Frozen Spinach, 10 oz
    Cheddar Cheese, 1 Cup
    Canadian Bacon, 7 oz package
    Sauteed Mushrooms, .5 Cup
    Chopped Fresh Broccoli, 1 Cup
    Water, 1 Cup
    Salt & Pepper to taste


Tips

I use whatever vegetables are on hand and sound good.


Directions

Mix all ingredients in a bowl & ladle into cupcake tins sprayed with a little cooking oil. Bake at 350 degrees for 20 minutes. These can be eaten hot out of the oven, but what makes them really great is that you can freeze, then take one out each day for breakfast on the go. They reheat in the microwave very well.
