Ingredients

1 c. Atkins All-Purpose Baking Mix
1.5 c. Almond/Coconut Milk (unsweetened)
1 egg
2 t. baking powder
1/4 t. salt
1 Splenda packet -or-5 drops of EZ Sweetz
Tips
Naturally, you will probably eat more than one pancake, so just adjust... and don't forget to calculate in butter, or whatever you use to top them. I tried Sugar-Free syrup. Not bad if you are okay with sugar alcohols. Fruit and a dollop of whip cream would be great, too. Same batter is said to work for waffles.
Directions
1. Whisk baking mix, salt and baking powder together. Briefly whisk egg separately, then add along with milk.
2. Stir til well blended. Let sit 5 minutes to let baking powder kick in while you heat griddle.
3. Heat griddle -- your choice: Add oil to prevent sticking or skip if you have a good quality non-stick. (No oil calculated into nutrients.)
4. Cook as normal pancakes. Makes about 10 Pancakes.
Serving Size: Makes 10 pancakes. Nutrients based on ONE pancake.
