Introduction

Ingredients

    2 tbsp extra-virgin olive oil
    1 cup chopped red bell ppper
    1 cup chopped green bell pepper
    1 cup chopped onion
    1 tsp VE Minced Garlic
    1 lb extra lean ground turkey (fresh, not frozen)
    1 tsp VE Chipotle Chili Powder (or chili powder)
    1/4 cup chopped green chilies
    2 tbsp fresh cilantro
    Salt, to taste

Tips

Tastes great on it's own, but makes a filling meal when served over some hot cooked rice.

Directions

1. Heat the olive oil in a large skillet on medium heat.
2. Add the onions, peppers and garlic and cook until slightly softened. Push the vegetables to one side of the skillet.
3. Add the fresh ground turkey to the empty side of the pan (the side of the pan that has the most heat), sprinkle with chili powder and salt, to taste.
4. Brown the turkey and break apart while cooking. Once cooked through add in the pepper mixture from the side of the skillet and stir in green chilies and cilantro. Enjoy!
