Number of Servings: 2

Ingredients

    2 cucumbers, peeled, seeded & thinly sliced or shredded
    1/2 heaping cup diced red onion
    1 cup halved cherry or grape tomatoes
    1/2 tbsp oregano (1tsp instead)
    1 tsp garlic powder
    1 tbsp red wine vinegar
    1 tbsp olive oil
    salt and pepper to taste (optional-not needed)
    1 pinch red pepper flakes
    1/5 cups packed baby spinach-chopped
    1/2 cup chopped red bell pepper
    1/4 cup crumbled feta
    1/2 cup chickpeas

Directions

Add all of the ingredients in a bowl and mix thoroughly to combine. (combine the oil vinegar and spices separately first.)
put in a sealed bowl shake a lot and chill for 30 mins.

Serving Size: makes 2 servings
