Ingredients

    2 Avocados, California - ripe enough to scoop from shell
    6 Tbsp. Organic Extra Virgin Olive Oi
    1/2 cup Cucumber - finely chopped/ grated
    1 Tbsp. red onion - finely chopped/ grated
    2 Tbsp. fresh Lemon juice,
    1/8 - 1/4 tsp. granulated garlic ( or 1-2 clove fresh minced)
    1 tsp. dill (double if using fresh)
    Salt and pepper to taste

Tips

I used 3 Tbsp. olive oil/ avocado rather than 2 to increase the fat content and use as a salad dressing. Looks like about 1.5 cups?


Directions

Combine grated cucumber and onion, avocado, olive oil and lemon juice with seasonings in deep narrow bowl. Use immersion blender to combine well. Store covered in refrigerator until using.

Serving Size: 2 Tbsps - so about 12 per 1.5 cup batch.
