Ingredients

    2 cup canned diced tomatoes
    1 onion, chopped
    Dash of cayenne pepper
    1/8 tsp ground cloves
    1/8 tsp ground cinnamon
    1 tbsp granulated sugar
    1/4 cup apple cider vinegar
    2 tbsp chopped green pepper
    1/2 tsp salt, or to taste

Directions

In a heavy-bottomed saucepan, combine the tomatoes, onion, cayenne, cloves, cinnamon, sugar and vinegar. Simmer, uncovered for 1 hour. Add the green pepper and simmer 30 minutes more. Add salt to taste. Chill before serving.

Note: Make whatever adjustments necessary for low sodium or sugar-free diets. Contains no HFCS.

    Wonderful flavor! Consistency of salsa, but if pureed could be pourable. A little confused by nutrition info. I entered ingredients using no salt added tomatoes and 1/2 c chopped onion (I used dry onion). Cooks down to about 1 1/2 c, so 10, 2T servings: cal-22.3; sodium 136.8. Great condiment! - 1/13/10
