2 medium ripe bananas, (the riper the better)
1 cup canned pumpkin
1 tsp sweet leaf stevia powder
1 Tb 0 calorie baking sweetener
1.5 cup uncooked quick oats
1/2 tsp baking powder
3/4 tsp cinnamon
1 1/2 tsp pumpkin pie spice
1/4 tsp nutmeg
pinch of salt
1/2 cup unsweetened vanilla almond milk
2 Tb ground flax seed
1/2 cup egg whites
1 tsp vanilla extract
1 scoop vanilla protein
1/4 cup chopped pecans
Tips
Serve immediately or store in fridge for reheating later.
Directions
Preheat oven to 375. Grease square baking pan.
Mash banana and pumpkin together. Combine all remaining ingredients except pecans. Pour into pan and top with pecans.
Bake at 375 for 30-35 min until cooked through.
