Ingredients

2 lbs beef shoulder, cut into ½-inch cubes
1 lb pork shoulder, cut into ½-inch cubes
¼ cup suet
¼ cup pork fat
3 medium-sized onions, chopped
6 garlic cloves, minced
1-quart water
4 ancho chiles
1 serrano chile
6 dried red chiles
1 Tablespoon cumin seeds, freshly ground
2 tablespoons Mexican oregano
Salt to taste
Tips
If you want to lower the carb count, you can opt not to flour the meat. Instead, add 1 1/2 tsp of xanthan gum to the spice and chile mixture before adding it to the pot.
Directions
1. Lightly flour beef and pork cubes.
2. Cook in a heavy skillet with pork fat and suet until brown.
3. Add onions and garlic and cook until they are tender and limp.
4. Transfer contents of skillet to a crock pot.
5. Add water.
6. Remove stems and seeds from the chiles and chop very finely.
7. In a molcajete or spice grinder, grind chiles then add oregano and salt.
8. Add chile mixture to the crock pot.
9. Cook on low for 8 hours or high for 4 hours.
10. Enjoy
