Ingredients

2 cups pumpkin puree
1/4 cup brown Sugar
1/2 cup granulated Splenda
2 large eggs, lightly beaten
1 1/2 cups unsweetened vanilla almond milk
2 tsp Vanilla Extract
2 1/2 cups Quaker Oats - Old Fashioned - dry
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp ground Ginger
1/8 tsp ground Cloves
1/2 tsp Salt
1 tsp Baking Powder
Directions
Preheat oven to 350ºF. Spray an 8x8 baking dish with cooking spray.
In a large bowl, whisk together the pumpkin, eggs, brown sugar, and Splenda. Whisk in milk and vanilla extract.
In a separate bowl, whisk together the remaining dry ingredients.
Add dry mixture to wet mixture, stirring until combined. Pour into baking dish. Cover with foil and bake for 30 minutes. Remove foil and continue baking for another 25-35 minutes until center no longer appears wet.
Serve warm or cold.
