Ingredients

10 Asparagus Spears, sliced into 1" lengths
1/2 Cup Diced Bell Peppers (Green, Red, Yellow, or Orange)
1/2 Cup Diced Onions
1 Roma Tomato, Diced
1/2 Cup Spinach Torn into Bite Sized Pieces
2 Oz. Smoked Salmon, Cut into Bite Sized Pieces
4 Eggs
1/2 Cup Almond Milk, Unsweetened
1 tsp Olive Oil
Tips
You can make this without the goat cheese for a dairy free meal or use regular milk for a richer flavour.
Directions
Preheat oven to 375 degrees.
In an oven safe pan, saute asparagus, onions and peppers in olive oil, when they are cooked to your liking, add tomatoes and spinach and cook until spinach wilts.
In a separate bowl, whisk together eggs and almond milk and add to pan.
Drop in salmon and sprinkle with goat cheese.
Turn down heat and allow to simmer for a minute or two without stirring.
Put pan in oven and bake uncovered for about 20 minutes or until eggs are cooked through.
Serving Size: Serves 2 for main dish or 4 as a side dish
