Ingredients

    3/4 cup soaked cashews
    2 cups packed fresh spinach
    1 tablespoon fresh lemon juice'
    2 - 3 mandarin wedges
    2 dates
    1/2 teaspoon salt
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    2 tablespoons cider vinegar

Tips

I use what ever citrus I might have if I have no lemon. You can replace mandarins with a wedge of orange. You can also sweeten with Agave if you don't have dates.
*Try adding crushed red peppers if you like things spicy and chopped water chestnuts or jicama if you want some crunch!


Directions

Place cashews in cup and cover with water. Let them soak for a few minutes. Add to blender (including the water) or Vitamixer followed by all other ingredients and blend. It will thicken when refrigerated. Serve with veggies.

Serving Size: makes 16, 1/8 cup servings (2 Tablespoons)
