Ingredients

    4.5 lbs of salmon filet
    2 large onions
    3 large eggs
    3 tbsp whole wheat matzo meal
    2-3 tbsp chopped fresh dill
    1-2 tsp salt

    vegetable broth for cooking them in

Directions

Vegetable broth - 2 quarts water, 2 large carrots, 2 ribs of celery, 1 onion in quarters, salt to taste. Combine and simmer for 45 minutes - strain or take vegetables out.

1. Remove skin from fish and cut fish into one inch square pieces. Put into food processor in two batches an chop relatively finely.
2. Mix eggs lightly
3. Chop onions finely or in food processor
4. Chop fresh dill
5. Combine fish, onions, egg, matzo meal, and salt in a large bowl

You should be able to form balls of about 1.5 to 2 tbsp in your hands. Bring broth to simmer and put about one layer of fish balls into the simmering broth, cover, and cook for 12-15 minutes. When done take out using a slotted spoon. Continue until the mixture is all cooked.

May be served warm or cold. We like them cold with horseradish.

Makes about 24 gefilte fish balls.
