Ingredients

2 T olive oil
1 lb. boneless, skinless chicken breast, cubed
1 medium onion, chopped (about 1 cup)
1 T chili powder
2 clove garlic, finely chopped, divided
1 recipe Better-than-Cheddar Walnut 'Cheese'
16 wanton wrappers
1 can Ro-Tel Original diced tomatoes and green chiles
1 lime, zested and juiced
3 T cilantro
Directions
Preheat oven to 350.
Heat olive oil in a medium skillet. While pan is heating, chop onion and sprinkle chicken with chili powder. Add chopped onion to skillet and saute until almost translucent, then add the cubed chicken. Cook until chicken is nearly done. Add half of the garlic and saute until fragrant.
Add the onion/chicken mixture to a food processor along with the Better-than-Cheddar Walnut Cheese and half of the lime zest and juice. Pulse until the chicken is in rough pieces and mixture is combined.
Spoon about 1 ounce of the mixture in the middle of a wanton wrapper. Moisten the edges of the wrapper with a wet finger and fold over. (You can use any fold you like, I like to make mine into a roll.)
Place wantons on a greased cookie sheet and bake for about 15 minutes.
While wantons are baking, pour the can of tomatoes and chiles into a bowl, add the chopped cilantro, the rest of the garlic, and the rest of the lime zest and juice.
When the wantons are browned, remove from oven and serve alongside the dipping sauce.
