Ingredients

    1 med. red onion diced
    1 jalapeno, diced(discard seeds and ribs)
    1 orange bell pepper, cored and diced
    6 baby bella mushrooms diced
    3 cloves garlic, minced
    3 TBS coconut oil
    3 carrots, diced
    1 jar(16 oz) Frontera Double Roasted Salsa(medium heat)
    1 jar(16 oz) Chi Chi's Salsa Verde(mild heat)
    8 cups low fat/low sodium chicken broth
    1 med or large head of cabbage, chopped
    Chili powder, salt and pepper to taste.

Tips

If you like super spicy food, leave the seeds and ribs in the jalapeno. Can be served with tortilla strips for added texture.


Directions

Heat coconut oil in large stock pot. Add onion, jalapeno and bell pepper. Saute until tender, about 10 minutes. Add mushrooms and garlic and saute 5 minutes more. Add both jars of salsa, carrots and chicken broth. Bring to a boil and add cabbage. Simmer until carrots and cabbage are tender. Stir in chili powder, salt and pepper to taste.
