Ingredients

    1 lb. chicken breasts, (cut into 2" cubes for faster cooking)
    1 c. no-salt added chicken broth
    1/4 c. dry white wine
    3 T Pearl tapioca
    3-4 oz. (about 1/2 can) artichoke hearts, drained and quartered
    3 oz. (about 1/3 c. pitted kalamata olives)
    1 can (about 1.25 cup) diced tomatoes, unsalted AND undrained
    1 tsp dried thyme
    3 tsp curry powder
    .5 tsp black pepper

Tips

Cutting the chicken breasts into 2" chunks allows for a much quicker cooking time.

Shred the chicken even further after cooking if you want to serve this as a soup dish; otherwise it's wonderful served over wild rice or pasta.


Directions

Combine all ingredients in a crock pot and mix well. Cover and cook on low for 4 hours. If chicken is still pink in the center after 4 hours, continue cooking on low, checking for doneness after each additional hour.

Serving Size: Makes about 6 servings (1 serving= 2-3oz chicken+ 1/2c sauce/vegetables)
