Tips

*Add an additional tbsp of Extra Virgin olive oil infused with chili and garlic when I add the ground chicken/turkey to the pot to give it extra chili flavor.

Directions

1. Sautee 3pepper blend and onion in 2 quart (or 2 liter) sauce pan covered for 2 minutes on medium heat.
2 Add ground chicken and turkey. Season with, coriander, cayenne, curry powder, garlic powder, salt and pepper*. Let brown covered for 5 minutes stirring halfway through.
3. Stir in tomatoes and Sriracha. Allow to simmer for 2 minutes.
4. Meanwhile, clean lentils in colander or strainer.
5. Add 4 cups water to the pot along with the lentils.
6. Stir, bring to boil then reduce to lowest heat. Cover and allow to simmer 1 - 1 1/2 hour (or when Lentils are tender) stirring every 20 minutes or so. Chilli will thicken when lentils are tender.
