Ingredients

1 small shallot
3/4 c. nonfat cottage cheese
1/4 c. reduced-fat mayonnaise
2 T. sour cream
2 T. white-wine vinegar
1/4 c. nonfat milk
1 T. fresh or dried dill weed
1/4 t. salt
1/4 t. pepper
1 15.5 oz. can chickpeas, drained and rinsed
3 c. cucumber, peeled and chopped
2 c. grape tomatoes, halved
1/4 c. crumbled reduced-fat feta cheese
1/4 c. scallions, sliced
1/2 c. creamy Ranch dressing
Directions
Dressing: Combine shallot, cottage cheese, mayonnaise, sour cream and vinegar in food processor & process until smooth. Add the dill, salt & pepper. Makes one and a quarter cups.
Salad: Mix chickpeas, cucumbers, tomatoes, feta cheese and scallions Mix in the dressing and toss to coat.
Serving Size: makes six 1-cup servings
