Ingredients

    3 tablespoons of EVO
    3 Garlic Cloves: Chopped
    2 Dried Red Chile Peppers
    1/2 Cup Chopped Onion
    2 teaspoons ground cumin
    1 teaspoon ground coriander
    1 teaspoon ground turmeric
    3/4 cup sour cream (used fat free)
    3 Pounds fresh Spinach: Torn
    1 Can Hunts Diced Tomato
    Either 8 ounces Ricotta Cheese or One block of Extra Firm ToFu.

Directions

Serving Size = One Cup

1. In a large saucepane heat 3 table spoons of olive oil and saute garlic, red chiles (optional) and onion until brown. Mix in the cumin, coriander, turmeric and sour cream (add more or less to achieve desired creaminess). Add the spinach, handfuls at a time until it is cooked down, about 15 minutes total. Remove from heat and allow to cool slightly.

2. Pour spinach mixture into a blender or food processor and add the tomato. Blend for about 15 to 30 seconds or until the spinach is finely chopped. Pour back into saucepan and keep warm over low heat.
*** If using Tofu, cut up into pieces and add to warm mixture and let them cook through ***

3. If using Ricotta Cheese (8 Ounces) Heat a medium frying pan with 3 table spoons of EVO over medium heat. Fry cheese until browned, drain and add to spinach. Cook for ten minutes on low heat.
