Ingredients

    2 lbs. pork chops
    1 tsp mace
    1 tsp cinnamon
    1/2 tsp salt
    2 TB tallow
    4 slices peeled ginger
    1 onion, cut into wedges
    2 apples peeled and cored and cut into chunks
    1 bay leaf
    1 c bone broth

Directions

1. Preheat oven to 350. Pat pork dry and season. Heat 2 TB tallow in dutch oven. On med/high heat add ginger slices and saute 3-4 minutes until it starts to brown. Remove the ginger. Brown pork chops in batches 2-3 minutes each side. Once brown remove. Add onion to the pot add 1 TB if needed. Cook stirring frequently until onion are slightly brown and starting to soften. About 8=10 minutes. Add apples and bay leaf, broth and stir. Nestle the porch chops in among the vegetables, adding juice the pork chops produced while they were set aside. Place pot in oven and bake 1 hour.
