Introduction

Fresh Cranberries may not be too great, but put them in a muffin, and somehow their juiciness explodes in your mouth and they are divine! Fresh Cranberries may not be too great, but put them in a muffin, and somehow their juiciness explodes in your mouth and they are divine!
Number of Servings: 12

Ingredients

    1/2 cup orange juice
    1/2 cup low-fat milk
    1/4 cup canola oil
    1 TBL grated orange peel
    2 egg whites
    Mix wet ingredients. In separate bowl mix:

    1 cup white flour
    1 cup whole wheat flour
    1/3 cup sugar
    1 TBL baking powder
    1/2 tsp. salt
    1 cup fresh cranberries, chopped. ( or frozen thawed and chopped)

Directions

Fold wet ingredients. Scoop into prepared muffin tin. Sprinkle top of muffin with sugar. Bake at 400 for 15-25 minutes or until cooked through.

Serving Size: Makes 12 Muffins
