Ingredients

2 c (1 #) dried red beans
3 c onion, chopped (3 medium)
3 c celery, chopped
1 c green pepper, chopped ( 1 medium)
3 cloves garlic, minced
2 tbsp olive oil
4 c water or vegetable stock
Seasonings:
1 tbsp cumin
1 tbsp chili powder
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
3 tsp vegetable base (to taste if using water instead of stock)
cayenne or red pepper flakes to taste
Tips
You can use canned red beans or kidney beans (drained) to save time. Go light on the seasonings, especially the cayenne, until you know how it works for you. Easier to add more than take it out! Obviously you can use meat sausage, also very delicious, but more fat and other things that are likely not good for you!
Directions
Soak and cook beans as per directions; drain. Saute vegetables in olive oil until tender. Add water or stock to beans, then add vegetables and bring to a boil, turn down to simmer. Add seasonings and simmer about 1/2 hour until flavors are well-blended and desired thickness. You can mash some of the beans and return to the pot to make it thicker. Serve with brown rice.
