Ingredients
-
1 medium sized yam, peeled and cubed
Diced celery - 1/2 cup
Salt - 1 dash
Extra virgin olive oil - 1 tsp
Eggs - 2 large
Onion powder - 1 tsp
Ground white pepper - 1 tsp
crushed garlic - 1 tsp
baking powder - 0.5 tsp
Knorr chicken cube - 1/2 cube
Swiss cheese - 1.5 cubic cube
Tips
Can be eaten with a tuna salad on the side.
Directions
1. Pour olive into a small 6 inch non-stick skillet and smooth around the base
2. Place all ingredients - except the cheese - into a blender and blend on high for 2 minutes
3. Pour into greased pan
4. Cut cheese into smaller cubes and spread on top of the pie blend
5. Light gas top to very high heat and place pan on top; allow a minute for it to sizzle and edges to begin to form around the pie
6. Reduce heat to the lowest setting possible without going off; cover skillet with 8-inch ceramic dinner plate and let it cook for 15 mins
7. After 15 mins, check that it's cooked by piercing the top with a toothpick. If it comes out clear it's done - you'll likely have smelt it cooking anyway.
8. Turn off the heat, serve pie from skillet or turn onto a plate and serve.
Serves 1 as a main meal or 2 people with accompaniments.
Serving Size: Makes 1 6-inch pie
