Ingredients

    1.5 lbs boneless, skinless chicken, cut into 1" pieces.
    3 cups frozen corn
    32 oz (4 cups) chicken broth
    1 medium sweet red bell pepper (1 cup chopped)
    28 oz can green beans
    1 cup skim milk
    2 cups instant mashed potato flakes
    salt and black pepper to taste
    crushed red pepper

Directions

In Dutch oven, combine chicken, frozen corn, and broth. Cover and bring to boiling over high heat. Simmer 12 minutes or until chicken is cooked. During that 12 minutes, add green pepper. With 3 minutes left on the timer, add the milk. When timer dings, add potato flakes and stir well. Salt and pepper to taste. Add crushed red pepper on top, if desired. 8 1 cup servings.
