1/2 cup coconut flour
3 Tablespoons carob powder (or Cacao powder)
1/2 teaspoon bicarb soda
1/4 cup cacao nibs (optional)
For crosses:
2 egg whites
1.5 Tablespoons coconut flour
Tips
Use parchment paper liners rather than oil the pan -- works beautifully. Nothing sticks!
Serve warm with grass-fed butter.

Directions
Preheat oven to 170 degrees Celsius (340F)
Grease 12 muffin tins with coconut oil
Make crosses by beating the egg whites with electric beaters. Add the coconut flour and beat again. Scoop plain egg mixture into a plastic bag,
Beat the 8 eggs with an electric beater for 1 minute.
Add the coconut milk (room temperature); beat again.
Add the coconut flour, bicarb soda and carob powder and mix with the electric beaters for another minute.
Add cacao nibs if using, stir in gently.
Scoop batter into muffin tins.
Snip off the corner and pipe onto the top of buns.
Bake buns for 15-19 minutes -- check for firmness and spring to touch in center. Cool in pan slightly.
