Introduction

Number of Servings: 4

Ingredients

    1 cans reduced sodium black beans, rinsed, drained
    1 can sweet corn niblets
    1/4 tsp black pepper
    1/2 tsp salt
    2 Tbsp or more Real Lime juice
    1 Tbsp Avocado oil
    1/2 tsp ground cumin
    1 Tbsp minced parsley
    1 tsp cumin seeds
    1/2 can seasoned diced tomatoes
    1/2 cup medium salsa
    2 cloves fresh garlic, crushed

Tips

Serving size can be doubled (2 servings per person) to make it into more of a meal.
The cooking time is chilling time.


Directions

This is the simplified version. Rinse and drain beans and corn, crush the garlic, and combine all ingredients in a large bowl. Adjust seasonings to taste if you like. Chill in refrigerator at least 20 minutes after making and keep refrigerated until serving.
