Ingredients

1 14 oz box light silken tofu
1 lb frozen spinach, thawed and squeezed to release excess moisture
Dash nutmeg
1 tsp salt
2 lbs whole wheat pizza dough
1/2 large red bell pepper
3/4 cup red onions
whole wheat flower for dusting
cornmeal for baking pan
Marinara sauce for serving if desired
Tips
You can get creative and add whatever vegetables you like! They are a little time consuming, but oh so good!
Directions
Preheat oven to 425 degrees.
Blend tofu, spinach, nutmeg and salt in a food processor, blender or immersion blender. Blend in pepper and onions.
Divide dough into 6 pieces and roll each into a circle, 1/4" thick. Divide tofu mixture evenly between the pizza dough circles, fold the circles in half, pressing edges to seal.
Dust baking sheet with cornmeal, place Calzones on sheet and back for 20 to 25 minutes or until light brown.
If desired, serve with marinara sauce (not included in calorie count)
