Always having pre-cooked potatoes and lentils on hand in my refrigerator, this comes together fast for a hearty breakfast, or even lunch or dinner.

Ingredients

    1 5 oz. baked potato, cubed
    2 oz. soy chorizo
    1/2 red or green bell pepper, diced
    1/2 orange or yellow bell pepper, diced
    1/2 small onion, diced
    1/2 cup cooked lentils

Tips

--Possible garnishes (not included in nutritional info): vegan sour cream, sricha sauce, avocado.

-- I have also made with with black beans or kidney beans, and have omitted the soy chorizo on occasion as well.


Directions

Heat non stick skillet. Saute bell peppers and onion in water 5-10 minutes until cooked as desired. Remove from pan. Add chopped, potato to hot skillet and cook until browned. Add soy chorizo to pan, brown and mix in with potato. Add cooked veggies and lentils, stir in and heat through.

Serving Size: Makes 1 hearty serving.
