Introduction

Officially my favourite breakfast of all time. The flavour, the creaminess, it's definitely worth getting out of bed for!

And I timed myself today, it only takes 6 minutes to make :-)

Ingredients

    2 large eggs
    1 small avocado (approx 100g flesh)
    35g cheddar cheese, grated
    Knob of butter (10g approx)
    Black pepper to taste

Tips

Really lovely and very quick to make if you use a crepe pan (which results in a large, thin omelette, folded over).


Directions

Crack the eggs in a small bowl and whisk with a folk until combined. Heat the butter in a omelette or crepes pan until melted. Pour the eggs into the pan and top with cheese and pepper.

While cooking, clean and roughly chop the avocado. Omelette should be ready in around 6 minutes (longer if you're using a small pan because the omelette will be thicker).

Just as the omelette is finished cooking, top one half of the omelette with the avocado, and then fold over the empty side, so that the avocado is completely covered.

Omelette should slide onto a plate easily, and is best when still hot. Enjoy!
