Introduction

Growing up at the seashore I learned to love Crab cakes early in my life. This recipe was handed down to me by my mother. Because I am on a low salt diet I do not add salt, the crab meat already has salt in it. Growing up at the seashore I learned to love Crab cakes early in my life. Ingredients

    Butter, salted, 2 Tbsp
    Flour, white, 2 Tbsp
    Milk, 1%, 1 cup
    Blue Crab, 1 cup, flaked and pieces

Tips

If you don't refrigerate the mixture it will stick to your hands and fall apart when cooked. Some of my friends add an egg to prevent this.


Directions

Melt butter. Add flour to make roux. Gradually add milk to make a thick white sauce. Add salt and pepper to taste.
Combine with crab meat and place in refrigerator 1 hour.
Form into 6-4 ounce crab cakes. Broil 18 minutes.
