Introduction

Ingredients

3 Large Egg Whites
3/4 Cup Sugar
1 tsp Cream of Tartar
2 tsp Vanilla Extract (or whatever flavor extract you want)
*Have also used sugar free jello to add flavoring, but, don't use too much.
Tips
This makes a LOT of cookies. For the meringue, after the sugar is added, test the meringue between your fingers to see if it feels gritty. Continue to whip until it's no longer gritty so all sugar is dissolved. To make my cookies, I use a cookie press. Makes them come out uniform and pretty!
Directions
Set egg whites out until they are room temperature.
Whip whites with a mixer until they are frothy, then add cream of tartar. Whip on medium speed until soft peaks. Add sugar slowly, 1 tbsp at a time and continue to whip on slow speed. Add the extract after the sugar. Whip on low speed until the meringue is stiff and and smooth, all sugar dissolved. Spoon onto two cookie sheets covered in foil. Bake in a 200 oven for 2 hours. Allow to cool completely and finish drying on racks for about 20 minutes before placing in air tight containers.
