Ingredients

    1 lb boneless, skinless chicken breast strips cut into chunks
    1 bottle Chi-Chi's Mild Pineapple Salsa
    1 bag boil-in bag brown rice
    2 tbsp olive oil

Directions

Cook rice according to package directions.

While rice is cooking, heat olive oil in a large skillet over medium heat. Cook chicken until no longer pink and slightly golden brown. Pour salsa over chicken. Reduce heat and simmer until rice is done.

Drain rice and add to chicken. Stir and serve.

Serving Size: Makes four 1 cup serves
