Ingredients

    Marinate chicken in ginger (4 tbsp), yellow curry (1-2 tbsp), fish sauce (4 tbsp), garlic (3) and chopped lemongrass (2 stalks).

    Brown chicken, then add:
    1 cup veg broth
    2 carrots
    2 onions (steamed or pre-cooked a little)
    1 sweet potatoe
    2 cups butternut squash
    1 can (400ml) coconut milk
