Ingredients

    2 lbs ground turkey
    .5 large onion diced
    1 small poblano pepper diced
    3 cloves of garlic finely chopped
    28 oz canned NSA (No Salt Added) diced tomatoes
    16 oz canned NSA tomato sauce
    16 oz canned kidney beans, drained and rinsed
    16 oz low sodium black beans, drained and rinsed
    2 tbsp chili powder
    2 cups zucchini, chopped
    2 cups yellow neck squash, chopped
    1 1/2 tsp ground cumin
    1 tsp red pepper flakes

Directions

Brown the ground turkey with the diced onion until fully cooked. Add all ingredients into a crock pot and cook on low for 6-8 hours. If you have never used the poblano pepper before it requires removing the thick waxy skin before cooking with it. There are many tutorials online to show you how. Or just omit it. Use whatever spices you are comfortable with and make it your own!
