Introduction

This is a great tasting, light-weight almond muffin that's safe for diabetics and has only .7 grams of saturated fat! It tastes great, too! This is a great tasting, light-weight almond muffin that's safe for diabetics and has only .7 grams of saturated fat! It tastes great, too!
Number of Servings: 12

Ingredients

    2 1/2 cups almond flour
    1/4 cup unsweetened applesauce
    1/2 cup agave nectar
    1/2 tsp. baking soda
    6 egg whites

Directions

Mix together applesauce, agave nectar and baking soda. Beat 6 egg whites until frothy and almost stiff. Fold into egg whites the wet mixture. Fold in almond flour. Spoon into 12 muffin tins. This recipe will not rise very much so fill the tins to the top. Bake at 375 F for about 20 minutes. Serving size is 1 muffin.
