Introduction

Tangy, sweet, and a bit of heat! I made this for dinner when I was out of mango for a mango salsa. A lot of flavor, and goes great with a side of plain sweet potato topped with a hint of cinnamon. Ingredients

    1LB of chicken breast tenders (1 tender per serving)
    1/2c of pineapple
    2 small nectarines
    1/4c red onion
    2T lemon juice
    1T dried parsley
    4 mini sweet peppers
    1 jalapeno, or 10 slices

Tips

The tropical salsa has little heat, so even the spice sensitive can enjoy! Add additional jalapenos for more heat.
You can double the chicken in the recipe if desired.


Directions

Layer foil in baking pan. Preheat oven to 375 degrees Fahrenheit. Chop all produce items and set in a mixing bowl. Top with lemon juice and herbs, mix thoroughly.
Top chicken with tropical salsa mix and bake for 25-30 minutes or until chicken is cooked through.

Pair with a sweet potato, makes a great protein packed dinner.
