Ingredients

1 medium onion, chopped
1 garlic clove, chopped OR minced
2 T olive oil
1 medium green bell pepper, diced
1 tsp chili powder
1 tsp cumin powder
1 cup chopped tomato OR 2 T tomato paste
1 cup fresh corn (or frozen corn)
1-1/2 tsp salt
1 tsp oregano (dried)
4 cups cooked beans (kidney, black OR pinto)
Tips
You can use canned beans, but be sure to drain & rinse them well before using.
Directions
Saute onions & garlic in oil until soft. Add green pepper & spices, sauce another 2-3 minutes. Add tomatoes & corn.
Mash 2 cups of the beans and add to the pot along with the whole beans. Add salt & oregano.
Simmer 30 minutes
