Ingredients

    3 large heads of raw cauliflower, shredded
    6 roma tomatoes, diced
    6 persian cucumbers, peels on, diced
    8 green onions, finely sliced
    3 lemons, juiced
    1 cup flat leaf parsley
    1/2 cup mint (spearmint)
    about 6 T extra virgin olive oil + more for serving
    salt and pepper



Directions

Mix together and serve with a fine drizzle of good olive oil and fresh ground sea salt and black pepper.
