Ingredients

    2 kilograms beef chunks
    1/4 cup red palm oil
    1/4 cup virgin coconut oil
    1/2 cup coffee, brewed
    150 grams green peppers, chopped
    1 kilogram onions, chopped
    1 head garlic, crushed with garlic press
    1,530 grams tomatoes, canned
    500 grams red beans, canned (drained)
    530 grams chickpeas, canned (drained)
    500 grams white beans, canned (drained)

    Spices:

    1 teaspoon red and black ground peppercorns
    2 tablespoons cacao powder
    1 tablespoon cumin
    1/2 teaspoon smoked paprika
    1/2 teaspoon cayenne
    2 teaspoons chili powder

Tips

This is also a great slow-cooker recipe (cook on low for about 6 hours), but be sure to sear the beef chunks in the oil before adding it into the slow-cooker.


Directions

Brown chunks of beef in melted oil. Add green peppers, onions and garlic and cook until vegetables are softened. Add coffee, tomatoes, beans, corn and spices and simmer until flavors blend and beef chunks are tender (about an hour).
