Ingredients

    Pink Salmon (canned), 12 oz
    Bread crumbs, dry, grated, seasoned, 1 cup
    Egg substitute, liquid (Egg Beaters), .5 cup
    Garlic, 1 tsp
    Rosemary, dried, 1 tsp
    *Lemon Juice, .5 lemon yields
    Onions, raw, .5 cup, chopped
    Spinach, frozen, .5 package (10 oz) yields
    Olive Oil, 1 tbsp
    Pepper, black, 1 tbsp

Directions

1. Drain fish well
2. In a bowl stir together egg, garlic, rosemary, lemon, onion and spinach until combined
3. Stir in fish & bread crumbs, season with black pepper
4. Heat large frying pan over medium-low heat with oil while forming the patties-make 6 patties
5. Cook each patty about 4 to 5 minutes per side

    Incredible!
    Delicious! The patty had a good flavor - almost a little spicy from the garlic and pepper. I had spinach from my garden that I sauted and added instead of frozen. I might try to decrease the amount of bread crumbs next time to cut more calories if the patty will still take shape. - 6/15/11
