Ingredients

    1 LB ground chicken
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp cumin
    salt and pepper to taste.
    i can Bush's Cocina Latina, Frijoles a la Mexicana
    1 can whole kernel corn, drained well
    4 large red bell peppers, halved through stem and cleaned of seeds and ribs.
    olive oil
    salt, dash

Directions

Brown chicken in skillet, then add seasoning, drain well. Add beans and drained corn just to heat through. Place pepper, cut side up, on foil lined baking sheet, like a bowl. Drizzle with oil and sprinkle with salt, then fill each half with heaping portion on chicken and veg mixture. Bake in oven, 350 degrees, for 30-40 minutes, until pepper is softened through. Two halves is one large entree serving.

Serving Size: Makes 4 servings, one whole pepper each
