Ingredients

5 oz. grilled pork tenderloin
340 g broccoli florets
2 large eggs
227 g baby portabella mushrooms
3/4 c. chopped onion
2 1/2 cups cooked rice
4 Tbsp. Soy Sauce
2 tsp. fresh ginger root
Directions
Serving Size: 3
Chop pork set aside.
Partially steam the broccoli, 2 mins. in microwave.
Beat 2 eggs and cook into an omelette in a med-high pan with non-stick spray, remove from pan. Chop into bite size pieces.
Clean & quarter the mushrooms, chop the onion.
Saute mushrooms, broccoli, onion and ginger root in the egg pan with non-stick spray.
Add pork, rice and egg to the mushroom mixture. Add soy sauce. Cook, stirring often, until heated through.
Chop pork set aside.
