Ingredients

1 lb. of ground turkey sausage
3 - 4 large russet potatoes, halved lengthwise and sliced thin
A bunch of regular kale or baby kale (rinsed)
1 onion, chopped
3 cups chicken stock (or broth)
5 cups of whole milk
1 Tbsp oregano
½ tsp Red pepper flakes
1 tsp black pepper
Directions
Boil sliced potatoes for about 10 minutes. Drain, rinse and set aside.
Brown sausage with onion.
When sausage is cooked, add stock (or broth), milk, oregano, red pepper flakes, salt and pepper. Slowly bring to a boil. Note: if using turkey sausage, there is no need to drain the meat. But if using pork sausage, drain the meat before adding liquid ingredients.
Slowly bring to a boil.
Add potatoes and kale.
Simmer for 10-15 minutes.
